Cucumber Salad (खमंग काकडी)

Khamang kakdi (cucumber salad) –
This is a maharashtrian salad/koshimbir, common in all marathi households.
Ingredients -
Cucumbar – 3 medium
Crushed peanuts (danyache koot) – 3 tb-spoon
Lemon/lime juice – 1 tb-spoon
Ghee/clarified butter – ½ t-spoon
Cumin seeds – ½ t-spoon
Green chili -1
Salt and sugar to taste
Chopped coriander for garnish
Procedure –
1. Wash cucumbers and peel the skin. Chop cucumber in very small pieces. You can use food processor or chopper for that.
2. Add danyacha koot, lemon/lime juice, salt and sugar and mix well.
3. Heat ghee in a small pan, add cumin seeds and chopped green chili, sauté for a minute and turn off the heat. Let the tadaka cool down completely and mix in a prepared salad.
4. Sprinkle chopped coriander and serve cold.
